Early December sees the launch of a new craft cocktail bar on 11 Wickham Street, Limerick.
The Wickham, will be opening early next month by co-owners Rachel Templeman and Stewart Lyons.
Both passionate mixologists, they have forty years in the bar trade between them. Speaking with Stewart, he mentioned that they both enjoy making the best drinks with fresh citrus juices, homemade syrups and infusions.
“If we can make any ingredient ourselves, we do”.
Stewart has had his own bars for eighteen years, including the popular Roundy’s Bar in Tralee, before it was sold two years ago. They are graduating to Limerick City with their new endeavour, serving craft cocktails, exciting wines by the glass and delicious street food.
The venue will also feature both modern and street art, popular board games, vibrant music and great DJs.
Admitting that Wickham Street was the perfect place for them to set up shop, Stewart stated that the street itself is “really on the rise”.
Other venues such as Crew Brewery and Wickham Way Market have “brought the area alive” and The Wickham is the next addition to the neighbourhood.
Originally both from Tralee, Rachel and Stewart have lived and worked in some of the finest metropolitan areas in the world studying their craft. From Dublin, to London to Amsterdam, their travelling has enhanced their technique and they are excited to bring thor expertise to Limerick.
With regards to the latest COVID-19 restrictions, Stewart added that the duo are “not too worried”.
“Everyone is in the same boat. We have plans for outdoor trading, takeaway and delivery if required. The show must go on”.
