Locke Burger has expanded its offering with the opening of a new New York-style pizza restaurant, which opened in Limerick City on the 10th of February.
The announcement was made on the restaurant’s Instagram account on the 4th of December, where the team teased a surprise for customers before later confirming the new concept of Locke Pizza. The pizzeria is located between Locke Burger and the Locke Bar on George’s Quay.
Locke Burger first opened its doors in 2020, following two years of operating food trucks around the county. The business has since built a strong local following, becoming known for its 28-day dry-aged burgers – a unique process that set it apart from other dining spots in the city.
In preparation for the launch, the Locke team travelled to New York to research the style, collaborating with established pizzerias and attending the GoodFella’s Pizza School on Staten Island to perfect their dough-making process.
The expansion comes as a positive development for Limerick city at a time when many businesses are facing closures, boosting the local economy and adding a fresh addition to the city’s food scene.
Limerick Voice spoke to Jack Costello on opening day, who explained that the idea had been in the works for several years.
“We’ve been researching for the past few years. With the Locke being a family business, with my parents and my siblings, we’ve always had a huge interest in food,” he said. “We’ve been over and back to New York trying to get different ideas and we just fell in love with the New York-style pizza.”
Jack added that the team built strong connections while abroad, which helped with the opening of the new venture.
“We got friendly with a couple of pizzerias over there and they came over and advised us on opening here. It’s good to have it all come together.”
